Salad with vegetables and yogurt dressing

Ingredients

300 g broccoli florets

30 g Yogurt dressing 200 ml Oat drink

To taste curry

200 g Durum wheat penne

200 g fresh tomatoes

150 g fresh yellow peppers

200 g leek

100 g Mayonnaise To taste Dried parsley

By taste salt

By taste Ground black pepper

Preparation steps

Weight for 4 portions – 1,4 kg

Cook the broccoli, then remove it and place it in an ice bath.

Mix the yogurt dressing, herbal drink, and curry with a whisk, then let it sit for about 5 minutes.

In a bowl, add the pasta, diced tomato, bell pepper, leek, and dressing, then mix well.

Serve on a plate, add broccoli florets on top, and sprinkle with parsley.

Tip

Serve as a cold appetizer or as a main vegan dish.
