Trattoria by Podravka workshops in METRO centers
As part of the GourMETRO program, METRO Croatia and Podravka organized a unique culinary workshop Trattoria by Podravka, dedicated to authentic flavors of Italian cuisine interpreted through a modern professional approach. The Italian trattoria symbolizes simplicity, warmth, and genuine flavors, a cuisine that respects tradition but leaves room for creativity. The workshops were held in four cities: Zagreb, Split, Rijeka, and Zadar.
The concept of a modern trattoria for the HoReCa sector
The workshop was designed as an interactive culinary experience with an emphasis on practical work, knowledge exchange, and inspiration for everyday professional work.
Participants had the opportunity to get acquainted with the concept of a modern trattoria tailored to the HoReCa sector, see how traditional Italian dishes can be standardized, efficient, and profitable, and learn to optimize kitchen processes without compromising on taste and presentation. The workshop also revealed new ideas for menus that follow current culinary trends.
Experts from Podravka demonstrated the application of products in dishes that combine tradition, reliability, and modern hospitality demands, while METRO provided an environment tailored for professionals: chefs, owners and managers of hospitality establishments, and food and beverage category managers.

Dishes that inspire
During the workshop, a variety of dishes were prepared that showcase the versatility of Italian cuisine and the possibilities of standardization in professional preparation. The menu included gazpacho, pinsa with tomato sauce, Neapolitan pizza with tomato sauce, and Tuscan bread and tomato soup (pappa al pomodoro).
Participants also had the chance to see the preparation of spaghetti in tomato sauce, cranberries, and Baranja kulen from Belje, as well as one pot pasta, a simple combination of penne pasta with tomato sauce, feta, oregano, and basil cooked in one pot. The menu also featured penne alla amatriciana and whole grain penne in a spicy sauce.
For dessert, panna cotta was prepared with forest fruit and caramel toppings.

Podravka products that facilitate professional preparation
All dishes were prepared using the Podravka Expert range which ensures quality, speed, and consistency.
Main ingredients included tomato paste, classic tomato sauce, chopped tomatoes, and tomato purée. Also used were Zlato polje whole grain penne and penne, Dolcela panna cotta powder, and Dolcela toppings (forest fruit and caramel).
