Vis Island Cake

Ingredients

Dough

1000g Fine white wheat flour

6g salt

7g Instant dry yeast

20ml olive oil

600ml water

3g sugar

Filling

500g luka

400g Peeled tomatoes 3g Ground black pepper 15g Vegeta

200g fillet of anchovies or salted sardines

4g sugar

100ml olive oil

Weight for 4 portions – 2 kg

From flour, salt, yeast, oil, and lukewarm water, knead a smooth dough and let it rise. When the dough doubles in size, divide it into two parts.

While you wait for the dough, sauté the sliced onion in olive oil. Once the onion is softened, add the crushed canned tomatoes, season with pepper and Vegeta. When the sauce is ready, remove it from the heat and let it cool.

Roll out the dough to a thickness of 1.5 cm and place it in a greased baking dish so that it overhangs the edges. Spread the filling on the dough, then arrange salty anchovies or halves of salted sardines on top, and cover with the other half of the dough. Fold the bottom part over the edges of the top and seal them well.

Brush the pogača with olive oil, poke only the top with a fork, and bake in the oven for 30 to 35 minutes at 180 °C.

Tip

Let it cool briefly so that the bread is easier to slice.
