Panna cotta with cherry and crumble

Ingredients

Crumble

35 g Wheat white flour

25 g butter

30 g almond flour

30 g sugar

Panna cotta

50 g Panna cotta 250 ml Whipped cream 5+

Cherry coulis

150 g frozen sour cherries

40 g sugar

10 g Vanilla sugar

Preparation steps

Weight for 4 portions – 0,36 kg

Crumble

Put all the ingredients in a bowl, crumble them, and place them on a baking tray lined with parchment paper. Bake in a preheated oven for 10 minutes at 170 °C.

Cream panna cotta

Heat the cream and add the panna cotta powder, then cook the cream while constantly stirring. Pour the cooked cream into molds for individual servings. Place the molds with the cream in the refrigerator, then cover the mold with cream with cling film and put it in the freezer.

Cherry coulis

Cook the sour cherries, sugar, and vanilla sugar. Puree the cooked cherries with a hand blender and strain through a fine sieve. Reduce the coulis to the desired thickness.

Dessert assembly

Layer the panna cotta on the crumble and before serving, drizzle the dessert with cherry coulis.

Tip

With panna cotta, you can serve raspberry, strawberry, or forest fruit coulis.
