Baked cannelloni with cod

Ingredients

600 g dried cod

200 g potato

200 ml olive oil

24 g garlic

20 g fresh parsley

1 g bay leaf

800 g Tomato sauce

5 g sugar

2 g Ground black pepper

12 pcs cannelloni

Preparation steps

Weight for 4 portions – 1.2 kg

Cook the cod and remove the bones. In the same water, cook the potatoes with their skins on.

Sauté garlic in olive oil, then add it to the blender along with the cooled cod and potatoes. Gradually add olive oil, season with salt and pepper to taste, and blend everything into a mixture. Finally, stir in finely chopped parsley.

Fill the cannelloni with the mixture and arrange them in a baking dish. Pour over them the tomato sauce that you have previously boiled and seasoned with salt, pepper, and sugar.

Bake in a preheated oven for 25 to 30 minutes at 200 °C.

Tip

Before baking, you can add grated cheese on top.
