Ingredients

400g bulgur

250ml Vegetable soup

45ml olive oil

50g onion

50g red peppers

200g Aromatic pizza sauce 15g Vegeta Sweet Chili

4g cumin

2g coriander

10ml juice and lime zest

2.5g salt

1g Ground black pepper

50g fresh parsley

15g mint leaves

50g lime wedges

Preparation steps

Weight for 4 portions – 1,6kg

Pour vegetable broth over the bulgur, cover it, and let it sit for 15 minutes to absorb the liquid, then fluff it with a fork.

Sauté the onion and pepper in olive oil for 5 minutes, then add the aromatic pizza sauce, Vegeta Sweet Chilli, cumin, and coriander, and sauté briefly for 2 to 3 minutes.

Stir in the bulgur and mix well to coat it with the sauce. Remove from heat, add lime juice and zest, and season with salt and pepper.

When it cools down a bit, stir in the parsley and mint. Serve in bowls with lime wedges and fresh mint.

Tip

For a more intense red-orange color, add ground sweet paprika, finely chopped roasted red pepper, and turmeric.

Serving

Before serving, finish with a few drops of olive oil. You will get an aromatic, slightly spicy tabbouleh with a pronounced tomato flavor and the freshness of lime and mint.
