Burrito with pulled pork

Ingredients

400 g Pulled pork

100 g red onion

150 g Sugar corn 100 g Roasted peppers

150 g sira cheddar

150 g mozzarella

10 g coriander

5 g salt

3 g Ground black pepper

4 pcs large tortillas

Guacamole

300 g avocado

5 ml lime juice

20 g tomatoes

5 ml olive oil

2.5 g chili powder

Weight for 4 portions – 1.4 kg

Sauté the red onion briefly in a pan, then add pulled pork, corn, and roasted peppers, and season to taste.

In another bowl, mix the cheddar and mozzarella.

Guacamole

For guacamole, mash the avocado with a fork, add lime juice, tomato, olive oil, chili powder, salt, and pepper. Mix until creamy texture.

Tip

A spoonful of sour cream or Greek yogurt on the side perfectly cools the heat.

Serving

You can briefly toast the burrito in a dry skillet or in the oven to melt the cheese and make the tortilla crispy.
